    MEXICAN CUISINE Here is another one of Mexico's treasures. Mexican cuisine is one of the richest and most diverse in the world. With basic ingredients like rice, corn, beans, tomatoes, avocado, spices, and chili peppers, Mexican dishes are tasty and flavorfu

    Meat dishes, such as grilled beef, pork, and lamb, are accompanied by vegetables and sauces. One of the most famous dishes is the tortillas, thin sheets of corn (occasionally wheat) cooked on a griddle and used to wrap other foods or as a side, much like bread. Depending on the filling and/or cooking method, tortillas take on different names:

    • The tacos These are the classic small tortillas cooked on the griddle or fried, filled with meat, rolled up, and served with the inevitable sauces
    • The burritos They are filled with beans, meat, chicken, seasoned with chili sauce.
    • The enchiladas They are similar to burritos, always filled with chicken and/or cheese and then fried, but immersed in a sauce, the enchilada, in particular
    • The quesadillas They are tortillas filled with cheese and grilled or fried.
    • L’enfrijoladas They are lightly fried tortillas, folded, and covered with bean sauce.
